Back in April 2017, I never once thought that anyone would watch my little cooking and eating channel. I started it because I loved sharing food and recipes. What better way to celebrate than feasting on crispy, crunchy homemade fried chicken and onion rings. I went with a Japanese panko crust for extra surface area and CRUNCH. Also, one of my first videos was eating Popeye's fried chicken. This is my little homage to how far I have come :D
Triple Coated Fried Chicken (adapted from
3 cups all-purpose flour
1 1/2 tablespoons garlic salt
1 tablespoon ground black pepper
1 tablespoon paprika
1 1/3 cups all-purpose flour
1 teaspoon salt
1/4 teaspoon ground black pepper
2 eggs
1 1/2 cups water
1 quart vegetable oil for frying
3 pounds chicken legs or thighs
Directions
1) In one gallon plastic bag, mix together 3 cups of flour, garlic salt, 1 tablespoon black pepper, and paprika. In a separate bowl, stir together salt, 1/4 teaspoon pepper, egg and water.
2) Heat the oil in a deep-fryer to 350 degrees F (175 degrees C).
3) Moisten each piece of chicken with wet mix, then dip in the dry mix. Shake off excess and dip in the wet mix, then dip in the dry mix once more.
4) Carefully place the chicken pieces in the hot oil. Fry for 15 to 18 minutes, or until well browned.
Panko Fried Onion Rings (adapted from
1 large onion, cut into 1/4-inch slices
1 1/4 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 egg
1 cup water
3/4 cup dry Panko or bread crumbs
seasoned salt to taste
1 quart oil for frying, or as needed
Directions
1) Heat the oil in a deep-fryer to 365 degrees F (185 degrees C).
2) Separate the onion slices into rings, and set aside.
3) In a small bowl, stir together the flour, baking powder and salt.
4) Dip the onion slices into the flour mixture until they are all coated; set aside.
5) Whisk the egg and water into the flour mixture using a fork.
6) Dip the floured rings into the batter to coat
7) Spread the bread crumbs out on a plate or shallow dish.
8) Place rings one at a time into the crumbs, and scoop the crumbs up over the ring to coat.
9) The coating should cling very well. Repeat with remaining rings.
10) Deep fry the rings a few at a time for 2 to 3 minutes, or until golden brown.
